Cucumber Pickles


Ingredients:

1 medium cucumber, peeled, halved lengthwise, deseeded and sliced

1 tablespoon white vinegar

2 ½ tablespoons sugar

1 teaspoon salt

1 teaspoon salt

2 ½  tablespoons hot water

Method:

Place the sliced cucumber in a bowl. Combine the vinegar, sugar,

Salt and hot water in another bowl, then add to the cucumber and toss well

Set aside to cure for 1 hour before serving.

This pickle keeps for a week in a jar in the refrigerator
