Chili Sauce with Shrimp Paste – Sambal Terasi
8 red finger-length chilies, deseeded
1 tablespoon dried shrimp paste (trasi), dry-roasted
1 tablespoon shaved palm sugar or dark brown sugar
1 tablespoon freshly squeezed lime or lemon juice
Method:
Grind all the ingredients to a smooth paste in a mortar or blender. For amore fiery sambal, sumbitude birds-eye chilies for the finger-length chilies.
